Preparation Time10 min

Cooking Time20 min

  • 1 pound ground beef
  • 1 large onion, chopped (about 1 cup)
  • 2 cans (26 ounces each) Campbell's® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
  • 2 soup cans milk
  • 1 cup finely shredded Cheddar cheese (about 4 ounces)
  • 1 cup Pepperidge Farm® Seasoned Croutons

  1. Cook the beef and onion in a 3-quart saucepan over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat.

  2. Stir the soup and milk in the saucepan. Cook until the mixture is hot and bubbling. Stir in 1/2 cup cheese. Cook and stir until the cheese is melted.

  3. Divide the soup among 8 serving bowls. Top each bowl with 1 tablespoon remaining cheese and 2 tablespoons croutons.

What a hearty and delicious soup. We tinkered with the recipe a bit and added some sliced mushrooms, plus a bit of garlic. We also opted to serve it over rice, rather than treating it as just a chowder. I think it'd be really good over pasta as well. We might try using some fettuccine noodles the next time we try making this. It's a really good and quick meal.
