Jumpin' Jimmy Coffee Cake

Jumpin' Jimmy Coffee Cake is a coffee lover's dream come true. This easy coffee cake recipe is the best of both worlds chocolate and coffee, so you don't have to choose just one vice. Grandma knows comfort food best, so you know this cake is bound to be delicious! The batter is made with coffee and the glaze is made with espresso powder, so you get a double helping of caffeine and chocolate in every bite. - 1 box yellow cake mix
- 3 eggs
- 1 cup cold coffee
- 1/3 cup butter, melted
- 1 cup chocolate sprinkles
- 2 cups powdered sugar
- 1 teaspoon instant espresso powder
- 1/4 cup milk (more if needed)
- extra chocolate sprinkles for garnish
Preheat oven to 325 degrees F. Spray a bundt pan generously with cooking spray and set aside.
In a large mixing bowl, combine cake mix, eggs, cold coffee, and melted butter. Stir until just combined. Mix in chocolate sprinkles. Pour evenly into bundt pan.
Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
Remove from the oven and allow to cool completely. Turn out onto serving platter.
In a bowl, whisk together powdered sugar, espresso powder, and milk. Drizzle glaze over cooled cake. Top with any remaining sprinkles.
