  • 1 box (about 16-ounces) pound cake mix
  • 3/4 cup V8 Splash® Berry Blend Juice Drink
  • 1 1/2 teaspoon V8 Splash® Berry Blend Juice Drink
  • 2 eggs
  • 1/4 cup confectioners' sugar


  1. Preheat the oven to 350 degrees F. Lightly grease a 9 x 5 x 3-inch loaf pan.

  2. Beat the cake mix, 3/4 cup juice drink and eggs in a medium bowl with an electric mixer on medium speed for 3 minutes or until the batter is thick and smooth. Pour the batter into the pan.

  3. Bake for 45 minutes or until a toothpick inserted in the center comes out clean.

  4. Let the cake cool in the pan on a wire rack for 10 minutes. Remove the cake from the pan and let cool completely on the wire rack.

  5. Stir the confectioners' sugar and remaining 1.5 teaspoons juice drink in a small bowl until the mixture is smooth. Drizzle over the cake.
