I love mug cakes. I live alone and they are perfect to satisfy a craving for something sweet without turning it into an all out "binge" This coffee cake in a mug is so different and innovative from the usual mug cakes. Honestly I make it in a big mug, and eat it all myself as a special teat on a "cheat day".

Well, isn't this a fun recipe?! It does seem a little bit complicated for such a small quantity, but it's ingredients I would normally have on hand, so I'll try it. I'll make one for myself and one for my son. I just want to see something bake in my microwave I pretty much just use my microwave to reheat or defrost.
