"This Simple Chicken Quesidilla recipe is the perfect way to use up leftover chicken and make a flavorful, quick dinner.Quesidillas are a go to meal in my house. I mean, in all honesty, we have some kind of quesidilla at least once a week. My kids have even brought them to school for lunch! That means I always have burrito wraps on hand to stuff with whatever else I have on hand. Quesidillas really are the best way to use leftovers! I’ve stuffed them with everything from ground beef, to leftover pot roast, even pork! Today, it was leftover chicken I needed to use up."

The very first quesadilla was a cheese quesadilla. I was not really impressed with it. Perhaps the reason it was served in an elementary school cafeteria. I have since been to a few Mexican restaurants and have learned that there is more to a quesadilla than cheese and I like this recipe.

This type of recipe was such a staple for me when I lived by myself. It was super easy to whip up a delicious chicken quesadilla for one - with plenty of sour cream, of course!
