- 1 package Italian sausage links
- 2 packages gnocchi
- 2 large chopped tomato
- 1 large chopped onion
- 2 cloves garlic, chopped
- 2 tablespoons fresh parsley, chopped
- 3 tablespoons olive oil
- 3 tablespoons Parmesan cheese
- Salt and pepper to taste
Heat a large pan with 1.5 tablespoons olive oil and add gnocchi. Let it crisp from one side, turn over, and add rest of the oil and the sausage links. Cook for 5 to 7 minutes and turn over the sausage.
Add tomato, onions, and garlic. Season with salt and pepper.
Cook sausage through and let tomato make a runny sauce.
Serve and garnish with Parmesan cheese and parsley. Sprinkle some red pepper flakes (optional).

I like food that has the word Rustic attached to it because that usually means so fancy ingredients and most often it is budget friendly too which, with a family of 6, is always welcome. This Rustic Tomato Gnocchi and Sausage is exactly all of those things as well as being a really good meal. Easy to prepare too which means it is just about perfect in my opinion!
