I ususally top my chicken or tukey pot pie with Bisquick bicuit mix. I never thought of using refrigerated biscuits, but I bet they are flaky and delicious! A hint is to save any leftover chicken or turkey when you have a bit meal (like Christmas or Thanksgiving) chunk it and freeze it in pre-portioned Ziploc bags. Then when you want to make a pot-pie, you can quickly thaw out an already measured portion. It is a quick and affordable weeknight meal. So good.
