Quick Fix Casserole

When you get home from work, making dinner is probably the last thing you want to think about. That's why it's nice to have easy casserole recipes like this Quick Fix Casserole on hand when you're in no mood to figure out what to make. This is one of the best casserole recipes to make for dinner because it's super hearty and ready in a flash. Made with ground turkey, cheese, and mushroom soup, this casserole is also extremely budget friendly! Now you'll be able to gather around the dinner table with peace of mind and a full plate.

  • 2 cans (8-ounces each) tomato sauce
  • 1 can (14.5-ounces) diced tomatoes
  • 2 cans (10.5-ounces) cream of mushroom soup
  • 2 cups shredded Mozzarella or Cheddar cheese
  • 1 (16-ounces) package of pasta
  • 1 pound ground turkey or ground beef

  1. Preheat your oven to 350 degrees F.

  2. Fill a pot with water and set on the stove to boil. You will need enough water to cook one box of pasta.

  3. While the water is warming up, add your ground turkey to a skillet. You want to use one with the tallest sides possible. Break it into chunks and brown over medium heat.

  4. Drain the fat from the ground turkey (or beef if thats what youre using)

  5. Once your water is at a rolling boil add some salt to the water (for flavor) and a dash of olive oil (to keep the pasta from sticking to each other). Then, add your pasta. Cook until al dente (or slightly firm).

  6. Once the pasta is cooked, drain the water and then place your cooked pasta into a 9x13 pan.

  7. Place the drained ground turkey back into the skillet you used before. Add the cans of tomato sauce, diced tomatoes, and cream of mushroom soup to the ground turkey. *You could also add some shredded cheese to the mixture add this point*

  8. Mix the ingredients together and cook over medium-low heat until it begins to simmer.

  9. Pour the meat/tomato/mushroom mixture over the cooked pasta in the 9x13 pan. The liquid from the diced tomatoes and tomato sauce will allow the mixture to seep down into the dish, covering all the pasta.

  10. Cover the casserole with shredded cheese.

  11. Bake in your pre-heated oven for 20 minutes or until the cheese on top is melted. After removing from the oven let the casserole set for 5-10 minutes and then serve to all the hungry bellies in your home!

Pasta is always popular with families, especially picky eaters. This easy pasta casserole will have everyone asking for seconds. When making this recipe, I would use low sodium tomato sauce, low sodium diced tomatoes, Healthy Request cream of mushroom soup, rotini pasta, and lean ground turkey or ground beef. It is important to drain the pasta when it is still underdone because it will continue to cook in the oven. This will ensure that the pasta is a good consistency in the casserole.

With having bought our first house, both working full time at the minute it can be a struggle to get dinner on sometimes as well as juggle a monthly budget, so this meal ticks both boxes for us as well as it looking hearty with the cold weather been in at the minute as well- will be trying this one next week!

This is a really good recipe. I actually enjoyed making it. I did use cream of chicken soup instead of mushroom, because that is what I had on hand. I also used the ground turkey, since it paired better with cream of chicken. I used half mozzarella cheese and half pepper jack, because my family enjoys the slight kick from pepper jack. I will definitely make this again, and I hope to have the mushroom soup to make this as written.

I have made something like this before, but it did not have the cream of mushroom soup. It looks really good. I think I will try it using half mozzarella and half cheddar cheese. I love those two together. My daughter loves pasta. Looks like a winner! Have you ever made it ahead and froze it. Do you think it would work well?

Can you add the servings size with the recipes...it would be helpful.

Very tasty! Will fix again.I used ground pork because my husband is not supposed to eat beef.
