I have never heard of olive oil muffins before but this looks like a nice simple recipe that makes light, moist, airy muffins. Orange is such a pleasing flavor and smell and I really love the addition of the fresh orange on top! Please note that if you want this eggless recipe to actually be vegan, you'll need to use vegan buttermilk. Other citrus flavors like lemon, lime, or even grapefruit would be a nice substitution!
