I love quinoa but would never have thought of using it for muffins so I was delighted to come across this recipe. Having made them I can very happily say that they are superb and they were devoured in just a couple of hours! They are so good that I will be making more over the weekend for a brunch we are hosting for friends and family.

I have made egg muffins and mini muffins many times before but I really never thought to add quinoa to the mix! I really love this idea. Usually, I just use cheese and some frozen veggies like broccoli or spinach. The egg muffins are also a great way to use up your leftovers so next time I have some leftover cooked quinoa in the fridge, I am definitely going to give this recipe a try!
