This is a variation of the traditional red beans and rice recipe. Instead of Cajun flavors, this dish has Mexican flavors. It also includes ground beef, which is not traditionally an ingredient. When making this, I would use unsalted tomato sauce, mild green chilies, reduced fat cheddar cheese, and lite sour cream.

You had me at 20 minutes! You can't go wrong with beans and rice for a quick weeknight supper. Love the addition of the beef to give it a little more substance. Great recipe!
