Why not have macaroni and cheese and tacos in the same dish? I think this is a recipe that will have the kids asking for seconds. I never thought about combining two of their favorite foods this way. We have chili spaghetti, but this dish sounds so much better and easier.

For a healthier version of this recipe, I would use lean ground beef, and after browning it, I would drain it before adding the onions. I would also use reduced fat cream cheese, lite sour cream, and reduced fat cheddar cheese.
