Easy appetizers are rarely true to name. This Raspberry Baked Brie, however, is as easy as spread, bake, and serve. Brie is an old fan favorite because of its creamy texture and mild flavor. Add zesty raspberry jam and you have a match made in heaven! This is best served with your favorite crackers, or with green apple slices for an unmatched combination of flavors. If you are not a fan of raspberry, try this with apricot jam or leftover cranberry sauce from Thanksgiving. I do like cheese and Brie. The apples are a great idea. There is also a triple cream Brie like cheese that isn't as "ripe" as brie but I don't think it would work as well. I think you want the balance of the sweetness and the ripeness together. I am definitely in on this one.

I'm so going to make this. I KNOW I will have left over cranberry sauce from Christmas day. This is also so quick and easy and no fuss. I especially like the suggestion of eating with apple slices and can't wait to try that! I love cheese. My mouth is watering while I read this recipe.
