"This Gluten-free & Weight Watchers Friendly Corn Succotash is made with frozen lima beans and fresh tomatoes, red pepper, thyme, oregano and parsley. It's also Weight Watchers friendly at only 4 freestyle smart points per serving!It's adapted from Anthony Bourdain's "Appetites Cookbook". When people pass on, I honor them by cooking their food. It's not like he was famous for his Succotash or anything, but it's the recipe I chose to pay homage to a great chef and food writer. I think he may have appreciated the obscurity of it."
