Oven Fried Potato Chips
Put aside all of your other potato recipes. Try making Oven Fried Potato Chips for one of the freshest chips you could ever imagine. You can have your potato chips and eat light too tonight!

Ingredients
- canola cooking spray
- 1 pound red potatoes, washed well
- 1 1/2 tablespoon canola oil
- 1/2 teaspoon salt
- 2 teaspoons your choice of herb blend
Instructions
- Preheat the oven to 425 degrees F.
- Line baking sheet with foil and coat with canola cooking spray (for easier cleanup).
- Using a large, sharp, non-serrated knife, cut the potatoes into very thin slices, about 1/8 inch.
- Place the potato slices and canola oil in large resealable bag; seal the bag and toss to coat well.
- Open bag and spread the potato slices evenly on the prepared pan. Sprinkle with salt and herbs, if desired.
- Bake for about 15 minutes, then flip with spatula and bake for another 10-15 minutes or until golden brown.

Omg, I think this may be my new favorite recipe on earth...lol I just love potato chips, but they don't like me very much so I usually avoid the chip aisle. Between the tons of salt and grease in the chips from the store and the opening the bag only to find it halfway full, I'm not sure which is worse. I'm definitely loving that these are baked and that you can control what goes on them...plus the peel being on the potatoes for even less guilt is no doubt a Win-Win in my book!
