  • 2 zucchini, washed and halved lengthwise
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1/2 cup Parmesan cheese

Baked Parmesan Zucchini Recipe


  1. Preheat the oven to 400 degrees.

  2. Arrange the zucchini, cut sides up, in an ovenproof dish.

  3. Drizzle with olive oil, season with the salt and pepper, and top with Parmesan.

  4. Bake for 15 minutes, or until the zucchini are tender and the cheese is melted and bubbly.

Zucchini is not grown where I live and that's why I'm not very familiar with this veggie. However, I loooove parmesan so I think I will be able to tolerate this vegetable with parmesan.

I love the ease and versatility of this Baked Parmesan Zucchini recipe. It's great as a side dish for dinner, or on it's own for lunch. I like cutting it into small pieces after it's cooked and having it as a snack while watching TV. I've served it as a snack on game day by adding a little pizza sauce, shredded mozzarella cheese and oregano on top.
