Zucchini is not grown where I live and that's why I'm not very familiar with this veggie. However, I loooove parmesan so I think I will be able to tolerate this vegetable with parmesan.

I love the ease and versatility of this Baked Parmesan Zucchini recipe. It's great as a side dish for dinner, or on it's own for lunch. I like cutting it into small pieces after it's cooked and having it as a snack while watching TV. I've served it as a snack on game day by adding a little pizza sauce, shredded mozzarella cheese and oregano on top.
