Vegan Sweet Potato Pie

Vegan Sweet Potato Pie is a sweet delicious treats that doesn't need eggs or milk to taste good. This healthy pie is one of the best fast easy vegan recipes around. This belongs on your vegan diet foods list of great pies.

Ingredients

  • 1 9 inch pie crust
  • 4 sweet potatoes
  • 2/3 cup water or soy milk
  • 1 1/2 tablespoon white miso
  • 1 tablespoon cornstarch
  • 1 pinch cardamom
  • 1 pinch cinnamon
  • 1 pinch nutmeg
  • 1 pinch ginger
  • 1/4 cup walnut halves

Instructions

  1. Prepare pie crust and set aside. Preheat oven to 375 degrees F.
     
  2. Wash and scrub potatoes. Place in a baking pan, brush skins with some olive oil and bake for 1 1/2 hours till very soft. Cool and then peel.
     
  3. Mash and add soy milk, miso, cornstarch, cardamom, cinnamon, nutmeg and ginger. Blend till the mixture has a creamy consistency.
     
  4. Reduce oven to 350 degrees F. Spoon mixture into pie crust. Garnish with walnuts. Bake for 1 hour. Chill or cool to room temperature before serving.
