Meatloaf Cupcakes Recipe

Our editors were a little unsure about the look of this recipe, but one bite was enough to win everyone over. It's hard to argue with a meatloaf recipe that includes Cheddar cheese, barbecue sauce, and bacon! This recipe is a fun change of pace for weeknight meals, and it's fun enough to bring even picky eaters to the table.

  1. Preheat oven to 350 degrees F.

  2. Heat a large nonstick skillet over medium-high heat. Cook bacon pieces until crisp. Remove from pan and place on a paper towel. Allow to cool.

  3. Add chopped onion to the reserved bacon drippings and sauté 3-4 minutes. Cool.

  4. Add turkey, breadcrumbs, cheddar cheese, BBQ sauce, eggs, sautéed onions & crumbled bacon to a bowl and mix until combined.

  5. Spoon the meat mixture into 12 muffin cups coated with cooking spray. Bake at 350 degrees for 20-25 minutes or until cooked through. Let stand for 5 minutes before removing.

  6. Put the potatoes into a pastry bag with a wide star tip and pipe the mashed potatoes on top of the meatloaf.

They may not look like much in the picture, but trust me, these Meatloaf Cupcakes are absolutely adorable. They cook up easily and the combination of flavors is terrific...bacon, bar-b-que sauce, cheese. My little niece loves the fact that I always make things "mini" like her. She's normally a picky eater, but she always eats things that are little. I made these with ground beef instead of turkey (personal preference). They look great with the mashed potato "icing" on top. I drizzled a little brown gravy over it...turned our great. Have fun with this recipe and take a break from the "norm".

I LOVED this- the meatloaf was flavorful with a bit of a kick, and the creamy mashed potatoes on top were the perfect garnish. I will definitely be making these a dinner staple!

While this was a visually disconcerting recipe (it genuinely looked like a carrot cake cupcake with buttercream frosting), it was really good, and I liked that I got to try this knife-and-fork dinner meal in a portable, less messy forum. The meatloaf itself was more flavorful than I had expected, which was a nice touch. You could also easily have fun mixing up the mashed potatoes by making them a bit more buttery, adding some cheese, etc.
