This soup is amazing. If you have convection oven, baking the potatoes only takes twenty minutes. Cheese, bacon, and potatoes are one of my favorite taste combinations. I make this soup once or twice every year. It makes a big pot and reheat any leftovers well. I think you can add either asiago cheese or cheddar cheese to the soup and leave the extra cheddar on top as optional. Both kinds are good in the soup.
