Ingredients

  • 1 pound Ground Beef
  • 2 tablespoons Unsalted Butter
  • 1 cup Diced Yellow Onion
  • 1 cup Celery
  • 1 cup Grated Carrot
  • 3 tablespoons All Purpose Flour
  • 3 cups Beef Broth
  • 3 cups Russet Potatoes
  • 2 cups Whole Milk
  • 16 ounces Velveeta Cheese
  • 1 tablespoon Parsley
  • Salt and Pepper
  • 1/2 pound Bacon
  • 2 cup Cheddar Cheese
  1. In a large stockpot or Dutch oven, saute the beef until browned. Drain and set aside.

  2. Melt the butter in the stockpot. Add onion, celery, and carrots and saute until softened.
