Moms Thick and Creamy Garlic Potato Soup

The name says it all. Mom's Thick and Creamy Garlic Potato Soup is a fast but filling soup. Using instant mashed potatoes, evaporated milk and diced ham, this recipe for potato soup can be whipped up in under an hour.

Ingredients

  • 3 1/2 cups peeled and diced potatoes
  • 1 cup finely chopped onion
  • 1 cup diced cooked ham (optional)
  • 3 1/4 cups water
  • 1/2 teaspoon salt, or to taste
  • 1 teaspoon ground white or black pepper, or to taste
  • 5 tablespoons butter
  • 1 cup evaporated milk (not sweetened)
  • 1 Package Instant Garlic Mashed Potatoes (usually sold in a box with 2 packs)

Instructions

  1. Combine the potatoes, onion, ham and water in a stockpot.

  2. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes.

  3. Stir in the butter and evaporated milk.

  4. When butter is melted, slowly stir in the instant garlic mashed potatoes. You can use more or less instant potatoes, depending on how thick/thin you like it. Add salt and pepper to taste. Serve immediately and enjoy!
