Hobo's Quick Cabbage Soup

When you're on a budget, easy cabbage recipes are always a go-to for dinner. We especially love this recipe for Hobo's Quick Cabbage Soup because it's both cheap and fast to make. With vegetables, beef broth, bacon and, of course, cabbage, you simply can't go wrong with simple soup recipes like this one. It will soon become one of your top picks for easy weeknight meals.

Cooking Time30 min

Ingredients

  • 1/2 pound bacon, diced
  • 2 large onions, sliced
  • 6 carrots, sliced
  • 1 small head cabbage, shredded
  • 2 1/2 cups beef broth
  • 2 1/2 cups water
  • Salt and pepper, to taste
  • Slices of French bread

Instructions

  1. Cook bacon in a large, heavy saucepan until crisp. Remove and save.
     
  2. Discard all but 2 Tbsp. of fat from the pan. Add onion and carrots and saute 5 minutes, stirring now and then.
     
  3. Add cabbage, broth, and water. Bring to a boil and simmer 30 minutes, or until cabbage is tender.
     
  4. Season to taste and add crisp bacon.
     
  5. Serve with slices of toasted French bread.
