Sweet Potato Fluff

"Sweet potato casserole with marshmallow meringue topping, also known as sweet potato fluff, is a delicious twist on a Thanksgiving staple. This creamy and sweet casserole is easy to make and sure to be a family favorite. I think sweet potatoes are necessary for any holiday meal. But I also like to create unique recipes for the holidays, just to change things up. Like a Cajun roast turkey, Thanksgiving rice, and mashed potato souffle, tradition with a twist! But this recipe was born from my gluten-free sweet potato pie. It has an optional marshmallow meringue topping which I wanted to try in place of mini marshmallows."
