My family and I all love vegetables so I don't have to try to disguise them for my family, but it is always nice to find other ways to prepare them. This Garlic Parmesan Zucchini Casserole is a wonderful new way to serve one of my favorite vegetables. I'm thinking of trying this recipe with butternut squash or eggplant. We'll see how it works out.

Of course this dish will fly off the table. It is made with three kinds of cheese. This I would say is a great way to get some greens in a diet for those picky veggie eaters. It may not be the best recipe selection because of the cheese, but anything in moderation is cool.

I have to admit because cooking is not one of my favorite things to do, I run in the kitchen and make the same dishes. Looking over this zucchini recipe makes me want to try preparing zucchini in a different way. The ingredient list is not over the top and the final dish sounds delicious.
