My husband and I have baked potatoes for dinner frequently. We add broccoli, turkey bacon and cheddar cheese and love this quick and relatively healthy meal, especially when we add a salad. One could substitute spinach for the broccoli and use low-fat cheese if needed. A dollop of sour cream is also always appreciated by my guy too.
