Easy Southwest Sandwich

"This Southwestern Sandwich is for the times you don't feel like cooking, but don't want a boring sandwich. With plenty of errands to run, time was a pressing issue. Sandwiches to the rescue! Of course, the kids don't always eat the same ones my husband and I do. Sandwiches are so easy to make I don't mind giving them peanut butter and honey while we try something else. I know my husband gets bored eating the same kind of sandwich too often. We like having a variety of go-to sandwich favorites to use for packed lunches, picnics, and light dinners."
