“better Than Coleslaw” Spanish Garlic Cabbage Salad

"This Spanish Garlic Cabbage Salad, known as Ensalada de Col Andaluza, is possibly the best cabbage recipe I have ever tasted. We’re talking a ton of great flavors, easy to make, and all done within minutes. Serve it as a side dish next to some pan-grilled fish and a bottle of Spanish wine for a delicious meal. To make this recipe, I used a head of green cabbage. You can also use red cabbage if you like. Either way, once you slice the cabbage, make sure to salt it and let it rest while you make the dressing. This will extract the water from it. Which will remove any raw flavor and help keep its crunchy texture."
