- 1 small green pepper, finely chopped
- 2 green onions, finely chopped
- 1 jalapeno, diced
- 3 tablespoons chopped fresh cilantro
- 3 tablespoons lime juice
- 1/4 cup extra virgin olive oil
- 3 tablespoons pure maple syrup
- 1/2 cup queso fresco
- 1/2 teaspoon ground black pepper
- 1 tablespoon salt
- 1 teaspoon chili powder

In a large bowl add corn, pepper, onion, jalapeño, and cilantro. Mix to combine.
