Ingredients

  • 2 bags baby white and yellow corn (14.4 oz.)
  • 1 small green pepper, finely chopped
  • 2 green onions, finely chopped
  • 1 jalapeno, diced
  • 3 tablespoons chopped fresh cilantro
  • 3 tablespoons lime juice
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons pure maple syrup
  • 1/2 cup queso fresco
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon salt
  • 1 teaspoon chili powder

Recipe

  1. In a large bowl add corn, pepper, onion, jalapeño, and cilantro. Mix to combine.

  2. Add lime juice, extra virgin olive oil, and maple syrup. Mix and add the queso, seasonings, and serve.

Oh, my goodness what a beautiful zesty and spicy salad for pretty much any occasion. I've definitely never been much of a corn fan but I think as I get older it's starting to grow on me. This would be amazing if the corn was grilled and then tossed with the other ingredients, but I'm thinking of going with either honey or brown sugar instead of the maple syrup... although I'm sure it'll be great either way!

This salad look delish. I had no idea was queso fresco was and I see now that it is cheese. No problem there! I will definitely be making this salad but I am not sure about adding in the maple syrup but I will try it and see what I think.

This Southern Corn Salad has a lovely fresh taste that keeps one coming back for more. We had it as an accompaniment to a barbecue for friends and it was very popular. Many of us had seconds and every last bit was eaten. I do not like maple syrup (or honey) so used a little brown sugar as a substitute but otherwise followed the recipe. The chili adds a lovely little kick to the flavor and we will definitely be using this recipe again.

I made this last week and cannot wait to make it again. I left out the jalapeos because I don't like spicy food that much, and it still tasted fantastic! I used it as a dip for tortilla chips :)

Yum! This looks delicious and really easy to make. I'm definitely going to give this recipe a try, but I might try using agave nectar instead of the maple syrup

This looks so tasty! I never would have thought to include maple syrup in this recipe for corn salad.
