For even more flavor, you could make this salad ahead of time and let it sit in the fridge with the dressing / marinade all over it for a few hours - with the exception of the fresh mushrooms. Then just add the mushrooms and give it another quick toss just before serving. (the mushrooms might get discolored or soak up a lot of the dressing) I love the crunchy textures of the raw veggies and since they are raw, this is so healthy!

I'm sure you will agree, you eat with your eyes! This salad looks very appetizing and that is because it is colorful. That being said I am sure it tastes as good as it looks. The dressing sounds delicious too. I like raw vegetable salads. They are fresh and light.

What a beautiful salad this is...so many colors and with all of those veggies I know it's going to be filled with flavor. I'd even throw in some sunflower seeds, pumpkin seeds, or almonds for a different texture and to make it more hearty. The dressing will no doubt bring all the flavors together nicely after it marinates for a little bit and if you're feeling creative you can make the veggies into pasta.

I love salads. I especially like this one as it's made with raw vegetables. I believe that eating raw vegetables is far better than eating them cooked and you have cooked out all of the vitamins. This is also a great idea instead of making the boring old green salad. I really love the salad dressing too!
