  • 1 packet Instant Vanilla Pudding Mix
  • 1 cup Cold Milk
  • 1/2 cup Thawed Orange Juice Concentrate
  • 1 container Cool Whip
  • 1 can Pineapple Chunks, drained
  • 1 can Mandarin Oranges, drained
  • 1 cup Shredded Sweetened Coconut

  1. In a large bowl, mix together vanilla pudding mix, cold milk, and orange juice concentrate.

  2. Set in the fridge for 5 minutes.

  3. Add in the Cool Whip, folding the mixture together gently.

  4. Add pineapple and mandarin chunks.

  5. Add shredded coconut, and mix together gently. 

  6. Place in the fridge for 3 hours before serving.

I'm a little confused but I love the concept of this fruit salad and would love to try it...but why are people talking about Jello? Did I miss something or was that a suggestion? Anyway, Orange creamsicle is definitely a classic flavor from way back when but I'm wondering, do you think this would work for an ice cream bar if the fruit was blended into the pudding and cool whip? I'm thinking this would also be a great addition to angel food cake. Yum!

Sorry, but I did not like the outcome. It was very soupy after 6 hours in the refrigerator.

You must use the pudding that you have to cook. Add the dry pudding, the dry jello and the water together and bring to a boil. Make sure you drain the fruit.

This recipe sounds so refreshing for a summer picnic! I think I would toast the coconut for a little extra zing in this one. I love using Cool Whip in recipes for salads and desserts because you know they always turn out to be the hit of the party! I'd like to see more varieties of Cool Whip made without high fructose corn syrup though. I believe only one doesn't have it. When you have a family member with an allergy to it, that makes it a bit hard.

This is for ncgrammie who needs help printing your recipes--since you don't have a PRINT option like other sites do! Hit 'CTRLP", and that will bring up your 'print menu' screen--which should show you a preview of how many pages, and what they will look like. (for this recipe it was 3, but you only need 1 2 for all of the necessary info.) If your printer does 2-sided printing, check the box for that option on your print menu page, and check 'pages' and enter '1-2', instead of "ALL". If 2-sided printing isn't an option, the recipe will print on 2 separate pages. This is for a Windows 10 OS. Hope that info helps.

If you don't want to use coconut flakes, you can use raisins, dried cranberries, or another dried fruit for a similar texture and sweetness. Hope that helps!

Oh, I love fruit salads that have Cool Whip in them. They aren't salads at all they are amazingly delicious! I will be making this one on Father's Day. It sounds like such an easy summer fruit salad. I'll take some to my Mom, too. She loves Creamsicles!

So refreshing and fresh tasting that I wish I had some to eat right now, lol! We had it as a dessert with homemade ice cream after our family barbecue yesterday and it was absolutely delicious. I used fresh pineapple pieces together with the can of mandarin orange segments and they balance out the sweetness beautifully. A really nice ending to a meal.
