Banana Bread with Buttermilk & Meringue

Buttermilk meringue give this banana bread recipe a Southern flavor. Best of all? Banana Bread with Buttermilk Meringue is a banana nut recipe!

Ingredients

  • 1 cup margarine
  • 2 1/2 cups sugar
  • 1 1/2 tsp. baking soda
  • 3 cups sifted flour
  • 1 tsp. salt
  • 4 egg yolks, beaten
  • 6 Tbsp. buttermilk
  • 2 tsp. vanilla
  • 2 cups mashed ripe bananas (4 to 5)
  • 1 cup chopped nuts (optional)
  • 4 egg whites, beaten

Instructions

  1. Cream margarine and sugar.
     
  2. Combine flour, salt, and baking soda; add to creamed mixture, alternating with egg yolks and buttermilk.
     
  3. Add vanilla, bananas, and nuts (optional). Fold in egg whites.
     
  4. Pour into greased loaf pans and bake at 325 degrees for 1 1/2 hours. Makes 2 large or 4 miniature loaves.
