Janet's Amish-Inspired Eclair Pudding

By: The Amish Family Cookbook. Copyright 2012 by Jerry and Tina Eicher. Published by Harvest House Publishers, Eugene, OR. Used by permission.
Updated June 14, 2018

This triple layered treat features chocolate pudding, vanilla pudding, a graham cracker crust and a sweet chocolate frosting. Needless to say, Janet's Amish-Inspired Eclair Pudding is the kind of dessert you serve on a special occasion. Not only does this no-bake dessert look impressive, it also tastes absolutely incredible. Taking cues from traditional Amish baking, this variation of an easy pudding recipe is one you'll turn to time and time again.

Chilling Time1 hr

Cooking MethodNo Bake

  • 3/4 box (1 lb.) graham crackers
  • 1 package (small) instant chocolate pudding
  • 1 package (small) instant vanilla pudding
  • 2 cups milk (divided)
  • 1 (8-ounce) cartons whipped topping
  • For the Frosting:
  • 1/4 cup butter, melted
  • 2 tablespoons cocoa
  • powdered sugar

  1. Line a 13 x 9-inch pan with graham crackers (leave whole). Set aside.

  2. In two separate bowls, mix chocolate and vanilla pudding with one cup milk each. Let puddings stand to thicken.

  3. Fold a carton of whipped topping into each bowl.

  4. Spoon chocolate pudding on top of crackers in pan, then top with an additional layer of crackers. Spoon vanilla pudding on top and add a final layer of crackers.

  5. Refrigerate for at least 1 hour.

  6. For frosting, mix butter and cocoa; add enough powdered sugar to make it spreadable. Spread over top layer of graham crackers.

You can't go wrong with a dish that includes chocolate and vanilla pudding can you? I have seen this recipe called many things like sex in a pan and Robert Redford pie. What is the difference between this recipe and all of those other ones. Is there a difference between all of them?

This is just another version of an existing recipe called Eclair dessert. Amish? I don't think so. Also, how much whipped topping is supposed to be used.

not sure what this was suppose to be resemble.. pretty awful

You should have 2 cartons are whipped topping because it say a carton to each pudding so you need 2

Do you add a whole carton of whipped topping to each pudding or just 1/2 of the 8oz carton?

You need to let this set longer than 1 hour in order for the graham crackers to soften. Over night is the best.
