    Lemon Curd

    Ingredients

    • 3 large lemons
    • 5 eggs
    • 1 cup sugar
    • 8 tablespoons butter, melted

    Instructions

    Grate rind from one of the lemons into the blender. Squeeze lemons and strain juice into blender. Add eggs and sugar and turn on the motor, and add the melted hot butter. Place in a heavy saucepan and cook, stirring constantly, over medium heat for about 4 minutes, or until thickened. Chill and serve with scones or lemon tea bread, or toast.
