Canned Salsa

Ingredients

  • 8 tomatoes, peeled and chopped
  • 8 onions, peeled and chopped
  • 8 apples, peeled and chopped
  • 2 green peppers, peeled and chopped
  • 6 cloves garlic, peeled and chopped
  • 2 1/2 cups vinegar
  • 3/4 cup sugar
  • 5 Tbsp pickling salt
  • 1/2 tbsp paprika
  • 1/2 Tbsp dry mustard
  • 2 tbsp red chili peppers (dry crushed red peppers)
  • 3 cans tomato paste (small ones)

Instructions

Combine vegetables adn vinegar in a saucepan. Simmer for 1 hour. Add sugar, salt, paprika, mustard, peppers and tomato past. Boil for 5 minutes. Bottle and seal.

I didn't try the recipe because the apples are a turn-off. We don't have a good supply of apples in south Texas at this time of year.
