Pork Steaks with Flavored Butter
"There is no end of trouble with pork steaks. The loin cuts that are the most common, and thought to be the best, are unbelievably dry. The tenderloin is not really a steaking cut. The ham – is the ham, end of story. Pork shoulder is probably my favourite bit of pig. It can be cooked slow and forever or flash-grilled; and these are simple grilled or broiled steaks served with fantastic flavored butter. No need to marinade them - the butter will take care of the taste."
