I was so surprised to find out that this pie can be prepared ahead of time and frozen! In the summer, it might even be great served frozen - just thaw slightly and toast the top using a kitchen torch as opposed to putting it in the oven. It is quite fattening though, but you can even just make the filling and use it as a dip for fresh fruit and graham crackers if you want to lighten things up.
