I love jambalaya, though I usually serve it over rice. The choice of fettucine is something I'm definitely going to try. I've used the pre-packaged cajun spices before and I'm interested in making up some of her recipe and using it. I've not included shrimp from time to time since I'm afraid of overcooking it. When I do include shrimp, I'll often cook it separately, then add it at the end.
