Easy Stroganoff Dinner for Two

Make only as much as you need and enjoy a delicious stroganoff dish for supper with this simple recipe!

  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 large yellow onion, chopped
  • 1 pound white mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 1/2 cup dry white wine
  • 1 cup sour cream
  • 8 ounces cooked linguine


  1. Melt butter in a large heavy saucepan over medium-high heat. Add garlic and saute 30 seconds.
  2. Add onion and saute another 2 minutes or so. Then add mushrooms and saute until tender, about 10 minutes. Don't worry if the mixture seems too dry.
  3. Reduce heat to medium, then add flour and stir another minute.
  4. Add white wine and cook until mixture thickens, stirring frequently, about another 2-3 minutes.
  5. Mix in sour cream and season to taste with salt and pepper.
  6. Add cooked linguine and toss to blend linguine with sauce.

The Easy Stroganoff recipe caught my eye because up to now I have only ever had beef stroganoff. This meatless version makes a very good meal and we virtually licked our bowls clean! The sauce was deliciously creamy and the mushrooms tasted gorgeous. It is quite quick and easy to make and the whole family loved it.

Interesting vegetarian version but we want meat! :)

you left out the beef!
