Chicken with Mushroom Linguini

Ingredients

  • 25g butter
  • 500g chicken mince or finely diced chicken
  • 1 onion, peeled and finely chopped
  • 2 rashers bacon, finely diced
  • 1 tsp minced garlic
  • 250g flat mushrooms, finely chopped
  • 1 tsp chilli flakes or powder (opt)
  • 2 Tbs chopped parsley, chervil or sage
  • 1 Tbs mustard
  • 1/2 cup cream
  • salt and pepper to taste
  • linguini pasta or similar for 4 people

Instructions

Heat butter in a frying pan and quickly brown the minced or diced chicken, onion and bacon over a moderate high heat. This may be best done in two batches. Add the minced garlic, mushrooms, chilli, herbs and mustard. Cover and simmer for 10 minutes until the mushrooms have softened and the juice has run from the mushrooms. Stir in the cream and season with salt and pepper to taste and keep warm. Cook the pasta in a large pot of boiling water until tender. Drain and toss through the chicken mix. This may be garnished with Parmesan and fresh herbs if you wished.
