Armenian Salad


  • 3 cucumbers, peeled and cut in 1/2 " cubes
  • 16 red radishes, sliced
  • 1 cup chopped celery
  • 16 black olives, especially Greek Kalamata olives
  • 3 Tbsp pistachio nuts, chopped (or walnuts)
  • 1/2 cup olive oil
  • 1 cup vinegar
  • 2 Tbsp lemon juice
  • 1 teaspoon salt


Mix the dressing and toss with the salad. Chill before serving.
