"Classic Rack of Lamb, I live for lamb chops. Juicy, tender, rare (please please give me rare), deep reddish pink, browned, crusty, herbed, fatty goodness."

  • 2 chopped fresh rosemary
  • 1 chopped fresh thyme
  • 2 garlic, minced
  • 2 olive oil


  1. Rub rib rack(s) all over with mixture of rosemary, thyme, and garlic. Sprinkle with freshly ground black pepper. Place in a thick plastic bag with olive oil.

  2. Spread oil around so that it coats the lamb rack(s) all over. Squeeze out as much air as you can from the bag and seal. Place in a container so that if the bag leaks, the container catches the leak.

  3. If you want, place in the refrigerator overnight. Or, if you are not marinating overnight, let lamb rack(s) sit in the rub marinade as it comes to room temperature before cooking.

  4. Remove lamb rack from refrigerator to 1-2 hours before you cook it so that it comes to room temp. (If the meat is not at room temperature it will be hard for it to cook evenly.)

  5. Preheat oven to 400F, arrange the oven rack so that the lamb will be in the middle of the oven. Score the fat, by making sharp shallow cuts through the fat, spaced about an inch apart..Sprinkle the rack all over with salt and pepper. Place the lamb rack bone side down (fat side up) on the pan.

  6. Wrap the exposed ribs in a little foil so that they don't burn. Roast at 400F for 7 minutes, then lower the heat to 300F. Cook for 7-15 minutes longer (depending on the size of the lamb rack, or one of the lamb racks.

  7. if you are cooking more than one), until a meat thermometer inserted into the thickest part of the meat 125F on a for rare or 135F for medium rare.

  8. Remove from oven, cover with foil and let rest for 5-10 minutes. Cut lamb chops away from the rack by slicing between the bones. Serve 2-3 chops per person.

Wow. Rack of Lamb back ribs. I'm not surprised why this is the Kennedy family's favorite dish. The meat is so yummy, so irresistible, so juicy, and oozing with mouth-watering flavors and aroma. I can't wait to follow this recipe. Great for family dinner.

Rack of lamb is one of my great eating pleasures and this one did not disappoint at all. The rub is very nice indeed and, after marinating in the refrigerator overnight, the meat was beautifully flavored. The children were visiting their cousins so the man of the house and I had the rack to ourselves (evil grin!) and with a side dish of roast fresh veg it was absolutely delicious.

I have always wanted to make a rack of lamb and never have. I am glad I found this recipe. I knew it was simple to cook a rack of lamb but had no idea where to start. I think marinating it overnight will make it more tender and moist to cook and I like the tip of allowing the meat to come to room temperature before cooking. I know rare lamb doesn't need much cooking so it's so simple. Couldn't be better!

Terrible directions...very vague on everything. I think I'll stick with recipes from other sites.

I like lamb. I am not a rare meat eater. Medium well is good for me. About how long would that take? The amounts need to be clarified for the rosemary, garlic, olive oil, and thyme. The seasonings would compliment the lamb greatly unless too much was used. Too much and they are ruined and lamb is too expensive to ruin.

How much oil teaspoon or tablespoon and how much garlic 2 whole or cloves
