If you're a chocolate and peanut butter lover, this is the recipe for you. This recipe for Brittled Ice Cream Sandwich is an easy dessert recipe that combines Brownie Brittle, peanut butter, and ice cream! Two pieces of Brownie Brittle are spread with peanut butter and ice cream is pressed between to make a sandwich. You can make these treats ahead of time and freeze them until you're ready to enjoy!

Ingredients

2 large pieces Brownie Brittle
Vanilla ice cream, softened
Smooth peanut butter

Instructions

Spread peanut butter on to Brownie Brittle.
Scoop ‎ice cream on to one piece and place other piece of buttered Brownie Brittle on top.
Press gently. Freeze immediately, until ready to serve.

What is brownie brittle? I have never heard of it. It sure sounds like a fantastic thing that I wish I would have found sooner. Is it like peanut brittle but with a brownie coating, or is it a mix, or something different? I can't wait to find out, so I can make this dessert.
