Before you cook these, make sure that you give the shells a good scrub, and let them hang out in a big bowl of tap water for a few minutes. This will get them to spit out any sand that they might still have inside them, Scoop them out, and you'll be able to see all the sand at the bottom of the bowl. My family will not eat anything from the sea, unless it is deep fried fish. So I plan to make this recipe just for me the next time they are out!

My family absolutely loves mussels and this recipe is perfect for us! The sauce is light but flavorful and the mussels are tender and juicy. I recommend having some fresh bread to dunk in the sauce after because otherwise you'll be trying to drink the rest of it from the bowl! It's also great with some pasta and fresh spinach or broccoli.

Very VERY good! I always thought that using mussels in the shell would be fiddly and fussy but no, not at all. This is such a good and really DELICIOUS recipe that I would be really happy to make it again for dinner tomorrow night, lol! Serve it with a fresh green salad and crunchy Italian bread and it is sheer heaven!
