I made some delicious quesadillas last night and wish that I had seen this recipe beforehand because it looks so great! I would definitely add in some chopped veggies like mixed peppers and onion. Or, I would make more of a chicken bacon ranch quesadilla with some ranch dressing, shredded carrots, and cheese!
