Triple Nut & Chocolate Energy Bars
"Putting nuts into desserts isn’t something new but this recipe calls for three different types of nuts – your favorite three types! Almonds, cashews, pecans, walnuts, or sunflower seeds. You name it and you pick it."
NotesMake sure to compress the final mixture as tight as possible before baking so that the energy bar comes out nice and firm.
After baking, the energy bar is very soft and easy to break, so it’s important to let it chill completely before cutting.
Makes12 Bars
Ingredients
- 1 1/2 cup rolled oats
- 4 oz unsalted butter
- 1 cup nut mix (sliced almonds, cashews, walnuts)
- 1/2 cup cake flour, firmly packed (60g)
- 2 tablespoon brown sugar
- 2 tablespoon granulated sugar
- 1 tablespoon honey
- 5 pieces Ghirardelli Hazelnut Heaven Dark Chocolate, chopped (or 1/2 cup bittersweet chocolate chips)

Preheat oven to 350°F.

In a saucepan, heat up butter over medium heat until butter is melted.

Add brown sugar, granulated sugar, and honey. Stir constantly until sugar and honey are completely dissolved in the butter. Remove from heat.

Mix flour and nuts together in a bowl.

Add flour mixture into butter mixture. Stir until even. (You might feel the mix is sorta dry at this point but don’t worry.)

Next, add chopped dark chocolate or chocolate chips and quickly stir until chocolate is evenly spread out.
