Ingredients

  • 2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, room temp
  • 3/4 cup sugar
  • 2 eggs
  • 2 teaspoons coffee extract
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon kosher salt
  • 1 cup light brown sugar
  • 1/2 cup light corn syrup
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla
  • 2 cups chopped pecans

Directions

  1. Heat oven to 350 degrees F. Lightly spray a 9x9-inch baking pan with cooking spray then line the pan with parchment paper leaving an overhang like a sling. 

  2. In a medium mixing bowl combine the graham cracker crumbs with the sugar and mix well. Add the melted butter and mix until fully combined.Evenly press the crumb mixture into the bottom of the baking pan.

  3. In the bowl of a stand mixer add the cream cheese, sugar, eggs, coffee and vanilla extracts and salt. Using the whisk attachment mix on medium speed until the mixture is well combined and smooth. Pour the mixture evenly over the graham cracker crust.

  4. In a small saucepan combine the brown sugar, corn syrup, cream, butter, salt and vanilla. Bring the mixture to a boil over medium heat constantly stirring. Cook for 1 more minute then remove the mixture from the heat. Mix in the chopped pecans. Pour the mixture over the cheesecake layer and carefully smooth over.

  5. Bake for 40 minutes until the cheesecake bars are set and the top is golden.

  6. Let cool completely then cover with foil and chill for 4-5 hours or overnight.

  7. Lift the cheesecake bars out of the pan using the parchment sling then cut into bars.

Just when you think you've had all the good cheesecakes you find another delicious recipe. These cheesecake bars look awesome. I love pecans too so I'm definitely going to love this recipe. This is a keeper for school bakes too! It's quick and easy to make and looks fail proof!

I'm so glad I found this recipe...I love, love, love pecan pie but I never make or buy it because I don't want to eat the whole thing. lol I'm wondering, can these cheesecake bars be frozen, and if so, how well and for how long will they keep? This recipe would so fun to put into cupcake liners and then give away as a gift. Yum, I'd love to be on that gift list!

These desserts bars were super sweet and definitely tasted like pecan pie. The cheesecake wasn't the best texture, but it was decent.

These were so yummy! I would definitely make them during the holiday season, and they would be a total hit.

I really liked these! I'm usually not a fan of cheesecake because it's too rich for me, but this was just the perfect amount of sweetness.

Something was off in these bars. The pecan pie part was a hit. It WAS SO DAMN GOOD. But the cheesecake part was a bit gritty. Ugh. The flavors were there, the texture was just off. Otherwise, I'd give this 5 stars. But, alas, 4 will have to do.
