Prepare to be amazed. Peanut Butter Cup Eclair Cake is a dessert like no other. The crust is made from eclair dough and is baked in a jelly roll pan so it's nice and thin. A peanut butter and vanilla pudding mixture is spread on top of the crust once it's cooled. Add a layer of whipped cream and finally bits of peanut butter cups. This chocolate eclair cake knocks it out of the park. Bring it to your next potluck and listen to all of the oohs and aahs as you set it on the dessert table.

You did what with the eclair? I can't believe it. I love eclairs, and peanut butter cups are an automatic favorite in my book. This dessert sounds like it is exactly what I have been looking for all year. I want to make it now. I think I just need the peanut butter cups because I already have everything else.
