Key Lime Tart
"Nothing else says summer to me, more than having sweets outside on my terrace with a cup of coffee in the afternoon. Either a piece of cake, a slice of pie or my favorite, a piece of key lime tart! I love anything citrus! Sadly this winter my key lime tree did not produce any fruit, maybe it was the lack of light or maybe after 2 years of rewarding me with a lot of fruit, it needed a little rest. Last summer I shared with you a key lime cake recipe that was made with the key limes that I had grown indoors."

Ingredients
- 1 cup honey graham crumbs
- 1 cup melted butter
- 1 can sweetened condensed milk (14 ounces)
- 4 egg yolks
- 1 can key lime juice (or regular lime juice)
- Zest of one lime
- 3 drops food colouring (optional)

In a bowl, mix the honey graham crumbs and melted butter.

Press into a 9 inch tart pan

In a bowl, whisk the egg yolks with the condensed milk, lime juice, lime zest and food colouring.

Pour over the crust and bake in a preheated oven at 325F for 15 minutes.

Cool on a rack.

Refrigerate for at least 2 hours before serving.

I had no idea you could grow key limes indoors. Where can I get the instructions to care for a key lime tree inside? My son loves this dessert more than any other fruit dessert. I want to surprise him and make him a nice tart like yours. I think he will appreciate it a lot.

I love this key lime tart recipe. It's very simple and straightforward. No fuss. It's very rich and sweet flavored but not too sweet because the lime cuts some of the sweetness out. I also think it's a little bit healthier because it uses crumbs instead of flour. If you're hosting a dinner party and you're short on time this tart will make a perfect addition.

Even having heard about Key Lime pie/cake/tart 100's of times on TV food channels I have never made or eaten it so this was a first. And a really delightful first it was too. The lime is a delicious and refreshing flavor against the sweetness of the condensed milk and this recipe is a definite must for the next girls quilting group meeting!
