Ingredients

  • 3 cups unsalted butter, room temperature
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon peppermint extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chocolate chunks (or chips)
  • chopped peppermints
  1. Preheat oven to 350ºF.

  2. Using a stand mixer, cream together butter and sugar for a minute or two.

  3. Add egg and extract and continue mixing.

  4. Add flour, cocoa powder, baking soda and salt. Mix until combined.

  5. Stir in the chocolate chunks.

  6. Spray the cast iron skillet with non-stick spray. I used a 9-inch pan.
