A really good and hearty dish and one that we will definitely have again. We used chicken thighs which were first browned in a skillet before adding them to the slow cooker. I do not like celery and we did not have any beans so used broccoli and cauliflower instead which we added later on. The bacon is a very nice addition that brings a lovely extra flavor. Altogether very tasty.

I can almost taste this lovely & healthy dish.! Yes, that small amount of bacon is there only for a little flavor, but won't leave a lasting impression on the waistline. I'm saving this recipe for the cooler days of autumn, and also for those frigid & snowy winter evenings. What could be heartier, healthier, more comforting, and as tasty as this? Since we love mushrooms I'll also add some whole Baby Bellas. We like to eat healthy (yet delicious) meals, and this one is truly a winner! (BTW, I'll use chicken legs & thighs.) Mmmmm....
